TARRAGON MEXICAN

Tagetes lucida.Has sweet-smelling leaves and flowers with flavor similar to tarragon. In warm areas where French tarragon is difficult to grow, this is and excellent substitute. Makes a stimulating tea. Golden yellow flowers, grows to 3ft. Use both the fresh flowers and leaves in salads, on poultry, fish, eggs, anywhere you would use French Tarragon as this has the same essential oil, and similar anise flavor. Add the leaves to herbal butters, sauces, soups and vinegars. Putting some flowers and leaves in olive oil makes for great Italian cooking and sautéing. This is also widely know as "Mexican Mint Marigold", "Mint-scent Marigold", and "Winter Tarragon"
