Annual growing 1-2ft with lacy, fern-like leaves resembling carrot tops. Small umbrella-like white flowers from May to July. Grow for medicinal, culinary, and craft uses. Loses flavor quickly when heated, so add it to recipes at the end. Best used fresh. Partial shade and shade is one of the few herbs that will grow in shady herb gardens. Grows best when temperatures are cool, in spring and fall. Chervil is one of the four traditional "Fines Herbs" used in French cooking, the others being tarragon, chives, and parsley. It is the key ingredient in bearnaise sauce traditionally used on steak. It enhances white fish, chicken, and especially eggs(used in an omelet), potatoes, green beans, and especially sales. In folk medicine, it was claimed to be used as a digestive aid, for lowering blood pressure, and, infused with vinegar, for curing hiccups. To make tea: 1 cup boiling water over 1tbs FRESH CUT CHERVIL, from Russell Gardens Wholesale, steep for 20 minutes. Reheat if you prefer it hot.
