Allium tricoccum, white, 4-16", April-May. NATIVE! Commonly known as "Ramps" these broad, basal leaves sets this unique "chive" from all others. The leaves go dormant by summer. This spring show is mesmerizing! Found in and along woods, floodplains, ravines from Canada down thru New England; south to Delaware and Maryland, in uplands toGeorgia and Tennessee; west to Illinois, Iowa, and Minnesota. Tall leaves fise from an onion-like bulb and wither before the flowers appear, leaving a naked stem topped by a domed cluster of creamy-white flowers. Ebtire plant has a mild onion taste. Flowers 1/4" long in clusters about 1 1/2" wide; cup-like, petals 3 and sepals 3. all the same color. Deep purple or burgundy hints on the lower stems. Both the white lower leaf stalks and the broad green leaves are edible. RAMPS are most commonly fried with potatoes in bacon fat or scrambled with eggs and served with bacon, pinto beans and cornbread. RAMPS can also be pickled or used in soups and other foods in place of onions and garlic.
