BORAGE

Annual growing 2-3ft high and 16" wide with broad, silvery-green, hairy leaves arising from a central stalk. Flowers are star-shaped in drooping clusters, mainly blue with black centers. Leaves have a cucumber flavor. Use newer leaves raw, steamed, or sauteed. Snip blossoms just after they open and candy, toss fresh in a salad, or dry with silica gel flower arrangements. Prefers full sun and fairly rich, moist soil with good drainage.
